Ingredients (Serves 2–3):

1 tablespoon extra virgin olive oil or organic avocado oil

1 small yellow onion, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

4–5 medium carrots, peeled and chopped

½ teaspoon ground turmeric (or 1 inch fresh if available)

3 cups low-sodium vegetable broth (or homemade stock)

1 tablespoon lemon juice (added at the end)

Sea salt and cracked pepper to taste

Instructions:

In a medium pot, heat oil over medium heat.

Add chopped onion and sauté for 3–4 minutes until soft and translucent.

Stir in garlic, ginger, and turmeric. Cook for 1 more minute until fragrant.
