This silky, savory soup blends sweet carrots, zesty ginger, and detox-friendly spices to create a soothing meal that supports digestion and immune balance. It's light enough for detox but deeply nourishing—ideal for lunch or dinner alongside your shake routine.

Ingredients (Serves 2–3):

  • 1 tablespoon extra virgin olive oil or organic avocado oil

  • 1 small yellow onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 4–5 medium carrots, peeled and chopped

  • ½ teaspoon ground turmeric (or 1 inch fresh if available)

  • 3 cups low-sodium vegetable broth (or homemade stock)

  • 1 tablespoon lemon juice (added at the end)

  • Sea salt and cracked pepper to taste

  • Optional: chopped parsley or cilantro for garnish

Instructions:

  1. In a medium pot, heat oil over medium heat.

  2. Add chopped onion and sauté for 3–4 minutes until soft and translucent.

  3. Stir in garlic, ginger, and turmeric. Cook for 1 more minute until fragrant.

  4. Add chopped carrots and broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until carrots are tender.

  5. Use an immersion blender (or carefully transfer to a blender) to puree the soup until smooth and creamy.

  6. Stir in lemon juice. Adjust seasoning with salt and pepper.

  7. Garnish with fresh herbs if desired, and serve warm.
